The blade is extremely wide and ground thin at the edge for tremendous shearing potential. This thin edge allows the blade to be honed to astounding sharpness. Plus, the cutting surface is continuously curved along its entire length for the most efficient possible slicing action. Because of the high carbon content in the stainless steel, you’ll find that the sharpness really lasts a surprisingly long time.
